At STUDIO, Michelin Guide ’Young Chef 2021’ Christoffer Sørensen creates modern Nordic gastronomy with an emphasis on wild, local, and sustainably caught ingredients. At STUDIO, Christoffer’s vast experience with Michelin-starred Nordic gastronomy rests on a firm French foundation and is shaped into a powerful, personal interpretation of Nordic cuisine – always open to foreign flavours, impressions, and techniques.

SUSTAINABLE GASTRONOMY

At STUDIO, we believe that gastronomy should make sense. Therefore, we carefully handpick our produce from suppliers who share our ambitions of leaving a positive footprint on the world around us. We aim to show that it is possible to create gastronomic experiences at the highest level without compromising on consideration and care – both for the environment and for the people involved.

NORDIC GASTRONOMY

At STUDIO, we craft contemporary Nordic cuisine with a French foundation and a global perspective. We draw significant inspiration from the opportunities presented by the local ingredients of the Danish seasons. However, we also readily allow our menu to be influenced by intriguing flavors, impressions, and techniques from other parts of the gastronomic world.

OUR WINES

At our place, the wine list is built around specially selected wines. We prefer winegrowers who have a sustainable and organic production. Preferably the small houses, where the farmer has a hand in the whole process - from the work in the vineyard to the final wine. However, this does not mean that we haven't adorned the wine list with some of the most renowned wine estates.

Ikke mindst den grønne stjerne til @restaurantalimentum og @restaurant_tri, samt nyåbnede @restaurant_aure og hele 3 til @restaurantjordnaer. Fantastisk godt gået. Vi vil ikke lægge skjul på, at vi selv havde drømt om en stjerne i guiden, men det blev desværre ikke i år. Vi bliver ved at række ud efter stjernerne!  Tusind tak til vores venner og vores dejlige gæster for alle de opmuntrende ord og søde beskeder, og ikke mindst en kæmpe tak til vores fantastiske team i køkkenet og restauranten, der leverer i verdensklasse hver eneste dag.
