SUSTAINABLE GASTRONOMY

At STUDIO, we believe that gastronomy should make sense. Therefore, we carefully handpick our produce from suppliers who share our ambitions of leaving a positive footprint on the world around us. We aim to show that it is possible to create gastronomic experiences at the highest level without compromising on consideration and care – both for the environment and for the people involved.

At STUDIO, Michelin Guide ’Young Chef 2021’ Christoffer Sørensen creates modern Nordic gastronomy with an emphasis on wild, local, and sustainably caught ingredients. At STUDIO, Christoffer’s vast experience with Michelin-starred Nordic gastronomy rests on a firm French foundation and is shaped into a powerful, personal interpretation of Nordic cuisine – always open to foreign flavours, impressions, and techniques.

Instagram post 18056573155454327 Last Sunday, we hosted our "Best Restaurant of the Year" nomination dinner. It was a delightful evening during where we had the opportunity to showcase our finest dishes and the most exquisite wines. We hope all our guests had an exceptional experience, just as we did.  Now, we eagerly anticipate our visit to Hotel & Restaurantskolen on the 17th of September, where Danske Madanmeldere will unveil the winners of the "Dish of the Year" nominations. We are honored to be nominated in both the Ocean and Land categories.

Vi har netop frigivet de sidste pladser ved vores spisebar til nomineringsmiddagen på STUDIO Den 10. september 2023. Den Danske Spiseguide har nomineret os til ”Årets Restaurant”, og denne aften er det vores tur til at folde paletten ud og vise hvad vi kan. Vinderen kåres til oktober. 
Vi præsenterer en udvidet menu med de fineste råvarer fra sensommeren samt en perlerække af de bedste retter fra vores første år i Carlsberg Byen. Der vil blandt andet være gensyn denne, vores måske mest populære, dessert: daggammelt brød med valle og malt. Skorpen forvandles til en is, som serveres ovenpå ”øllebrød”. 
Prisen for menuen, inklusive champagne, en eksklusiv vinmenu, samt kaffe med sødt og avec, er 4.000,- pr. person.

Instagram post 17979251474244627 We have been 'shortlisted' for an award at the 'Restaurant & Bar Design Awards', which honors the world's most beautifully and meticulously designed restaurants and bars. STUDIO has been nominated in the 'Small Space' category.  We take immense pride in being part of this field, and we once again extend our appreciation to both designer Anders Busk Faarborg and ATM Design, as well as artist Frederik Hesseldahl. Their interior design and artistic touches have provided us with such exquisite premises. The winners will be announced in early September, and the awards will be presented at a ceremony in London on the 19th of October. We remain hopeful.
