STUDIO is dynamic Nordic gastronomy. The experience at STUDIO is head chef Christoffer Sørensen's interpretation of modern Nordic cuisine. It is always deeply rooted in solid flavors and the best seasonal ingredients—never dogmatic or closed off to inspiration from other parts of the world.
STUDIO is featured on the World’s 50 Best 'Discovery List' and is currently ranked number 81 on OAD’s list of the best restaurants in Europe. STUDIO is also ranked on La Liste 1000 with a score of 91.50 points.

Christoffer Sørensen's cuisine combines the local and foraged, the fermented and wild, with a French foundation and often a Japanese inspiration in both taste and aesthetics. The result is deep, pure, and fresh flavors that delight, renew, and surprise.
At STUDIO, you will encounter the finest, sustainably caught fish and seafood from the Nordic region, while also often experiencing the taste of Danish game on the menu. Before joining STUDIO in 2021, Christoffer spent nine years as a loyal companion and sous-chef in Claus Henriksen's kitchen at Dragsholm Slot.
AESTHETICS IN COPENHAGEN
The clean lines and minimalist aesthetics are reflected in STUDIO’s space on the former brewery grounds in Carlsberg Byen, which today is a vibrant and architecturally exciting urban area in constant development. STUDIO’s new home is located precisely where the original source of the brewery’s pure water once sprang. Water is the source of all life, and it has inspired artist Frederik Lassen Hesseldahl’s dynamic wave, which sweeps across the restaurant’s back wall, creating a space that is calm yet never stagnant. This mirrors Christoffer Sørensen’s cuisine—carefully considered and thoughtfully crafted, but always in motion.
A PART OF LOCA GRUPPEN
STUDIO is part of the LOCA Gruppen, which also includes restaurants like Kilden in Haven, Almanak in the Opera, and RADIO. LOCA was established to create restaurants with sustainability at the forefront—both in terms of food and people.
At LOCA, the focus is on sustainable restaurants and activities guided by the mantra:
"EVERY MEAL MATTERS."
Every meal that LOCA sends out into the world is intended to make a positive difference. The food should taste fantastic, but it should also be made in a way that respects both the planet and the people who prepare it. There is a belief that if done right, enjoying food can contribute to a healthier planet while also bringing more joy, flavor, and prosperity throughout the entire food chain.
THE TEAM BEHIND STUDIO
Christoffer Sørensen, Head Chef
Before joining STUDIO in 2021, Christoffer spent nine years as a loyal companion and sous-chef in Claus Henriksen's kitchen at Dragsholm Slot. During this time, he also discovered his passion for pastry and trained as a chocolatier. In STUDIO's kitchen, Christoffer draws on this extensive experience with wild herbs, fermentation, and playful gastronomy—always grounded in precision and consistent, excellent flavor.
The head chef role at STUDIO is Christoffer's first, but he has already made his mark. Four months after his first day, Christoffer was honored by the Michelin Guide with the 'Young Chef Award 2021.' Shortly after, White Guide followed suit by awarding him 'Young Chef Talent of the Year' and placing STUDIO in the Global Masterclass—the guide's highest classification. However, the journey for Christoffer and STUDIO has only just begun.
Jesper Nielsen, Restaurant Manager
Jesper Nielsen is the captain of STUDIO's front of house, where his warm personality helps create the comfortable and relaxed atmosphere that is so important to us at STUDIO. Jesper has had a long career in the restaurant industry, gaining experience at establishments such as The Paul, Henne Kirkeby Kro, and Clou.
When it comes to the wine list, Jesper has a particular fondness for great, classic wines from top regions like Burgundy, Bordeaux, and Barolo, but he also discovers remarkable wine experiences off the beaten path. Taste, craftsmanship, and sustainable cultivation are the guiding principles Jesper follows when curating the wine pairings at STUDIO.
Merete Holst & Dorte Juhl Østergaard, Restaurateurs
Merete Holst and Dorte Juhl Østergaard are the founders behind the LOCA Gruppen, which owns and operates the restaurants STUDIO, Almanak in the Opera, Kilden in Haven, GAARDEN, and Dolores. Additionally, LOCA is a co-owner of RADIO in Frederiksberg.
The LOCA Gruppen, whose foundation is the creation and development of gastronomically sustainable businesses, is described further below.
